SPAM Bites from Daddy
After telling y'all about the SMAM balls recipe that Daddy called me about yesterday, I got a few requests for the recipe, so I made some this morning to show y'all. Now, I called them SPAM bites because, when they were baked, the rolled balls straightened out a bit, which he didn't say. Still, I thought they were pretty tasty, and I dipped mine in yellow mustard, just like I do with sausage balls.
A few years ago, Mama came up to help me take care of Zaylee while I was having surgery to get rid of the cancer that had come back. When I got home from the hospital, my mom had cooked SPAM and okra for dinner. She put food on Zaylee's plate, and I wasn't sure if she would eat it, but she did. A few minutes later, I hear, "Grandma, I need some tea to wash it down." Mama always asks, "Can I get you something to wash it down with?" and I couldn't help but laugh. That phrase has stuck with Zaylee, and she will say, "Make sure we have something to wash it down with" even before I put drinks on the table to go with our meals.
SPAM Bites from Daddy
- 12 oz. can SPAM
- 1 3/4 C. bisquick mix
- 1 1/2 C. shredded sharp cheddar cheese
- 1/2 tsp. red pepper flakes
- Cut the SPAM into pieces and pulse it in a food processor until it is ground.
- Put the rest of the items in a bowl and mix. By hand, work all the ingredients together until the mixture is smooth.
- Take a small piece and roll it into a ball. Put on parchment paper-lined baking sheet.
- Keep going with the rest of the mixture.
- Bake at 350°F for 25–30 minutes, or until brown and light.
