BANANA PUDDING

BANANA PUDDING

What you will need
  • 3/4 cup granulated sugar
  • a quarter  tsp salt
  • half cup all-purpose flour
  • three cups milk, low fat or whole
  • three large egg yolks
  • three tablespoons butter, room temperature
  • two teaspoons vanilla
  • one box of vanilla cookies
  • three to four bananas, ripe but firm
  • two c sweetened whip cream
  • one banana (sliced, for garnish)
How to make it
In bowl, combine sugar, salt also flour; stirring to combine. Slowly stirring in milk to smooth. Pour to top of double boiler on simmering water. Cook, whisk frequently, until mix begins to thick.
In a small bowl, whisk the egg yolks; Gradually stir in about 1 cup of the slightly thickened hot milk mixture. Return egg mixture to double boiler, stir in vanilla and butter and continue whisking and cooking until thickened. Remove from heat and let cool slightly.
In tall dessert glasses or a two-quart serving dish, layer vanilla wafers, then slice banana.
Spoon some of the pudding over the banana layer, then layer more vanilla wafers and banana slices, topping with the pudding. Serve with whipped cream topping. If you're using short dessert dishes, use only one layer each of the wafers, banana slices, and pudding, then top with a dollop of whipped cream.
Garnish each serving with a few banana slices and a sprig of mint if desir
