Homemade Pierogi Filling Recipe
Preparation Time: 30 minutes | Cooking Time: 20 minutes | Chilling Time: Overnight
Ingredients:
- 5 pounds of peeled potatoes
- 1 large onion
- Salted butter
- 2 bags of sharp cheddar cheese
- Half and half (to taste)
- Salt and pepper (to taste)
Instructions:
- Boil the Potatoes:
- Place the peeled potatoes in a large pot of salted water.
- Slice the potatoes in half and then cut each half into thin rounds to help them cook faster.
- Boil the potatoes until they are tender. This usually takes around 15-20 minutes.
- Saute the Onions:
- While the potatoes are boiling, chop the large onion into small pieces.
- In a separate pan, melt some salted butter and sauté the chopped onion until it becomes caramelized.
- Remove the sautéed onions from the heat and let them cool down.
- Prepare the Potato and Cheese Mixture:
- Drain the boiled potatoes and return half of them to the pot.
- Add one bag of sharp cheddar cheese to the pot with the hot potatoes. The heat will help the cheese melt faster.
- Begin mashing the mixture together.
- Add the remaining potatoes and the second bag of cheddar cheese.
- Continue mashing until the cheese and potatoes are fully incorporated.
- Adjust the Consistency:
- Add salted butter, half and half, salt, and pepper to the potato and cheese mixture.
- Continue mixing until you achieve a firm but creamy consistency. Be cautious not to make it too creamy; you want it to be firm.
- Incorporate the Caramelized Onions:
- Add the sautéed onions to the mixture and mix everything together.
- Taste the filling and adjust the seasoning with additional salt and pepper if needed.
- Chill the Filling:
- Transfer the pierogi filling to a container, cover it, and refrigerate it overnight. This will allow the flavors to meld, and the filling to firm up.
- Serve or Use in Pierogi:
- This delicious mashed potato and cheddar cheese mixture can also be enjoyed on its own as a side dish or even as a meal.
