Sweet Crepe Recipe with Ricotta Filling
Thin sweet crepes with a creamy ricotta cream cheese filling rolled up and sauteed until crispy and golden served with sour cream.
Servings: 6 servings (12 crepes)
- 1 recipe for basic crepes
- 4 Tbsp butter, sauteeing
- sour cream, serving (optional)
- 12 oz cream cheese, room temp
- 1 cup ricotta cheese
- 1 tsp vanilla extract
- 1/3 cup granulated sugar
prepare and assemble crepes-
Prepare one recipe of the classic crepes.
In a bowl, mix the cream cheese until cream. Add the ricotta cheese, vanilla and sugar and mix until well combined.
Layout a crepe, generously coat crepe with creamy ricotta filling. Roll tightly and continue with all the crepes. Cut the crepes in half or thirds.
In a skillet, melt 2 Tbsp butter. Add the filled crepes and saute over medium heat until cripsy and golden on both sides.
Bake crepes: Arrange crepes into a baking dish. Thinly slice the butter and add over top of rolled-up crepes. Bake covered at 365°F for 25-35 minutes.
