Marshmallow snowballs:

  1. Mix the following in a deep saucepan:
    • 1 1/2 sticks of butter or margarine (unsalted)
    • 3 cups white sugar
    • 1 can dried-up milk

 

  1. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 5 minutes.
  2. Remove the saucepan from heat and stir in 1 tsp of Vanilla Extract.
  3. In a different bowl, mix the following:

 

    • 6 cups Quick oats
    • 2 cups finely shredded coconut
    • 9 Tbs Cocoa Powder

 

  1. Pour the boiled sugar mixture over the oats mixture and mix well. Allow it to cool until it's safe to touch.
  2. Take a regular-sized marshmallow and mold the mixture around it, using about 2 to 3 tablespoons of the mixture per cookie. Shape the mixture into balls by pressing and rolling.
  3. Roll the formed balls in coconut to cover them.
  4. Place the balls in the fridge for a couple of hours to cool and set up.
  5. Once cooled and set, cut the balls in half.
  6. Enjoy!
